Chia Pudding Recipe

This is when you reach for that pick-me-up snack. Its a healthy, easy and filling snack that has a pudding like texture, amazing flavour and lends itself to endless topping possibilities. It’s a snack will leave you feeling satisfied and energised for your day.

Chia Pudding
Ingredients

  • 1 cup chia seeds

  • 2 cups water

  • 1 cup almond milk

  • 3 tbsp. 100% pure maple syrup

  • 1 tsp. cinnamon

  • 3 tbsp. desiccated coconut

  • 1 tsp. vanilla extract

Method

Mix chia seeds and water and leave for 1 minute until seeds start to absorb and expand. Mix in remaining ingredients (adding in milk last) to combine. Mix well so there are no lumps and pour into individual cups or small dishes. Place into fridge and leave overnight to set.

Tip: To make a chocolate version, simply omit the coconut for 1 tbsp. of raw cacao powder. Delicious!

Raspberry Compote
Ingredients

  • 1 cup frozen raspberries

  • 1 tbsp. 100% maple syrup

Method

Simmer berries and maple syrup over a low heat on the stovetop until mixture reduces (approximately 5 mins). Serve warm on pancakes or leave to cool in a glass jar and store in fridge for a yummy jam.

Whipped Coconut Cream
Ingredients

  • 1 can of organic coconut cream (refrigerated overnight)

  • ½ tsp. vanilla extract

  • ½ tbsp. 100% maple syrup

Method

Scoop out hardened coconut cream into a bowl and leave out remaining liquid. Add maple syrup and vanilla, and whisk together until smooth and creamy.
